Many of the lab ovens for some reason have settings from 0-10, how that corresponds to the real world is anyone’s guess.
Over the years, I have upgraded many of the lab ovens to digital controls. It is usually pretty easy to do. I would go in and take out the analog controls and then cut a window in using a jig saw with a metal blade on it. It makes short work of sheet metal. Then you wire the existing 120 circuit into the temperature controller. Then run the output off the controller to a relay to line voltage that is sized for the heaters. Install thermal couple wires into the oven chamber that hook into the temperature controller and you are done.
